| dc.description.abstract | Η παρούσα πτυχιακή εργασία στοχεύει στη διερεύνηση της διασφάλισης ποιότητας σε ένα Ελληνικό βιολογικό ελαιοτριβείο που εδρεύει στην Εύβοια. Αρχικά πραγματοποιείται θεωρητική προσέγγιση της έννοιας της ποιότητας καθώς και των Συστημάτων διασφάλισης ποιότητας που υπάρχουν ενδεικτικά. Έπειτα αναλύεται η ελιά καθώς και το ελαιόλαδο με τις κατηγορίες του. Στο τρίτο κεφάλαιο παρουσίαση του ελαιοτριβείου Αμαρύνθου καθώς φωτογραφίζονται ο εξοπλισμός και οι χώροι της επιχείρησης. Για την ολοκλήρωση της πτυχιακής εργασίας διανεμήθηκε ερωτηματολόγιο συγκεκριμένο ελαιοτριβείο όσο και σε άλλα 2 της περιοχής όπου αναλύθηκε το πρώτο ξεχωριστά στο τέλος πραγματοποιήθηκε η συγκριτική Μελέτη των τριών ελαιοτριβείο. | dc.description.translatedabstract | This thesis aims to investigate quality assurance in a Greek organic olive mill based in Evia. Initially, a theoretical approach is taken to the concept of quality as well as to the quality assurance systems that exist as an indication. Then the olive is analyzed as well as the olive oil with its categories. In the third chapter, a presentation of the Amarynthos olive mill as the equipment and the premises of the company are photographed. For the completion of the dissertation, a questionnaire was distributed to a specific olive mill as well as to another 2 in the area where the first one was analyzed separately at the end, the comparative study of the three olive mills was carried out.
