| dc.description.abstract | Σκοπός της παρούσας πτυχιακής εργασίας ήταν η παρουσίαση των κυριότερων εντόμων που θα μπορούσαν να χρησιμοποιηθούν από την σύγχρονη κοινωνία ως εναλλακτική πηγή τροφής. Η κατανάλωση εντόμων, γνωστή και ως εντομοφαγία, κερδίζει συνεχώς έδαφος ως βιώσιμη και διατροφικά πλούσια πηγή τροφής. Η μελέτη αυτή, καταγράφει ορισμένα εγκεκριμένα έντομα, που σύμφωνα με την Διεθνή Οργάνωση Τροφίμων και Γεωργίας (Food and Agriculture Organization) χρησιμοποιούνται ήδη σαν πρόσθετα τροφίμων, ακόμη και ως συμπληρώματα πρωτεΐνης. Η εργασία αυτή χωρίζεται σε τρία μέρη. Στο πρώτο μέρος δίνονται πληροφορίες σχετικά με τη μορφολογία και τον βιολογικό κύκλο των εντόμων που χρησιμοποιούνται στα τρόφιμα. Στο δεύτερο μέρος αναφέρονται τα πλεονεκτήματα της χρήσης των εντόμων ως πηγή τροφής στη σύγχρονη κοινωνία, καθώς γίνεται και ιδιαίτερη αναφορά σε κάποια από τα έντομα. Τέλος, στο τρίτο μέρος αναφέρονται τα μειονεκτήματα που προκύπτουν από την πρακτική αυτή και θα πρέπει να ληφθούν υπόψη. | |
| dc.description.translatedabstract | The purpose of this thesis was to present the of major insects that could be used by the modern society as an alternative food source. Eating insects, also known as entomophagy, is winning all the time soil as a sustainable and nutritionally rich food source. This study lists some approved insects, which according to the International Organization Food and Agriculture Organization (FAO) are already in use as food additives, even as protein supplements. This work is divided into three parts. In the first part they are given information about the morphology and life cycle of insects that used in food. The second part mentions the advantages of the use of insects as a food source in modern society, as it is also special reference to some of the insects. Finally, the third part mentions the disadvantages arising from this practice and should be taken into account. | |
