The temperature of the nutrient solution is a critical environmental factor that can influence the secondary metabolism of plants. This study examined the effect of four different temperatures (ambient temperature, 15 °C, 20 °C, and 25 °C) on the concentration of anthocyanins in strawberry leaves, under two soilless cultivation systems: hydroponics (NFT) and aeroponics. Anthocyanin content was measured at specific time intervals throughout the experiment using a specialized anthocyanin content meter. The results showed that anthocyanin concentrations increased over the course of the experiment in both cultivation systems. The highest levels were recorded at 25 °C, while elevated values were also observed under ambient temperature conditions. In contrast, anthocyanin biosynthesis appeared to be limited at 15 °C and 20 °C. These findings suggest that the temperature of the nutrient solution significantly affects the physiological processes of strawberry plants, either enhancing or limiting anthocyanin production depending on the intensity and range of thermal fluctuations.
